Watermelon Sorbet with Raspberry Coulis


This adult dessert requires a little bit of time but it will be well worth it when everyone is singing your praises during dessert.



Ingredients:

  • 1/2 cup water
  • 1 cup sugar
  • 4 1/2 cups watermelon puree, strained
  • Juice of one lime
  • 1 oz Midori liqueur
  • 1 cup fresh raspberry syrup
  • 1 cup honeydew melon, chopped
  • 1 cup cantaloupe, chopped
  • 8 fresh mint sprigs

Method

To a small sauce pan, add sugar and water together and bring to a simmer over medium heat for five minutes or until sugar is dissolved. Cool completely then add to watermelon puree and whisk in juice of lime and melon liqueur. Pour mixture into a covered container and chill in refrigerator at least two hours or overnight. After chilling period, place container in freezer for two hours then remove and spoon mixture into a blender. Blend for one minute or until smooth then return to covered container and to freezer for one hour. After one hour again blend the mixture for one minute, returning to freezer for another hour. Freeze mixture for at least two hours or until frozen. To serve spoon mixture into martini or margarita glasses, drizzle with raspberry syrup and top with fruit. Garnish with mint sprigs.
