Walnut Oatmeal Pie in Chocolate Crust


Impress your friends with this easy to make pie made with chocolate cookie wafers, walnuts, and chocolate chips. Tastes great with vanilla ice cream.



Ingredients:

  • 18 chocolate wafers, finely crushed
  • 3/4 cup ground walnuts
  • 1/4 cup unsalted margarine, softened
  • 3/4 cup light corn syrup
  • 3/4 cup packed brown sugar
  • 1/2 cup milk
  • 1/4 cup melted unsalted margarine
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup quick-cooking oats
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts
  • 9-inch pie shell

Method

Combine cookie crumbs, 3/4 cup walnuts and 1/4 margarine in bowl; mix well. Press mixture over bottom and side of 9 inch pie shell. Bake at 350 degrees for 7 to 8 minutes. Cool on wire rack for 10 to 15 minutes. Whisk corn syrup, brown sugar, milk, 1/4 cup unsalted margarine, eggs and vanilla in bowl until smooth. Stir in oats, chocolate chips and 1/2 cup walnuts. Spoon mixture into pie shell. Bake at 350 degrees for 40 to 50 minutes or until set, covering edge with foil if necessary to prevent over browning. Garnish with whipped cream and additional walnuts.
