Viceroy's Dessert


Ladyfingers are layered with pudding and cream in this chilled dessert. Top it with grated chocolate.



Ingredients:

  • 2 packages vanilla pudding  
  • 3 1/2 cups milk  
  • 2 packages lady fingers  
  • 3/4 cup dry sherry  
  • 1 cup heavy cream  
  • 1 T confectioner's sugar  
  • Apricot jam  
  • Grated chocolate

Method

Cook pudding with milk; add 1/2 cup sherry when thick. Spread layer of jam on lady fingers. Place lady fingers on bottom of glass dish and around sides. Sprinkle lightly with sherry. Top with 1/2 cooled pudding. Whip cream with sugar. Put half on top of pudding. Repeat another layer of each ending with whipped cream. Sprinkle chocolate over and chill in refrigerator.
