Very Berry "Lasagna"

This dessert "lasagna" is made with slices of pound cake, strawberries, raspberries, and cream cheese-pudding mix.
 

Ingredients

  • 2 1-pound loaf pound cakes (homemade or purchased)
  • 3 cups strawberries, mashed
  • 4 cups raspberries, mashed
  • 1/4 cup fresh orange juice, divided use
  • 1 cup granulated sugar, or taste, divided use
  • 2 packages (8 ounce) cream cheese, softened
  • 2 boxes ( 5 ounce) instant vanilla pudding and pie filling
  • 8 ounces heavy whipping cream
  • 8 ounces whole milk
  • 1/2 cup powdered sugar
  • 2 cups strawberries, pureed
  • 2 Tablespoons sugar, or to taste
 
Method

Cut cakes, lengthwise, into 1/2-inch slices. In a medium bowl combine mashed strawberries, 2 Tablespoons orange juice and 1/2 cup granulated sugar. Stir to blend. Set aside. In another bowl combine mashed raspberries, 2 Tablespoons orange juice and 1/2 cup granulated sugar. Stir to blend. Set aside. In a large bowl combine cream cheese, pudding mix, cream, milk and powdered sugar. With a hand-held electric mixer or whisk, beat until mixture is well blended and foamy. Set aside for 5 minutes. Arrange 1/3 of the cake slices in a 13x9x2-inch baking dish. Pour the strawberry mixture over the cake slices and cover with 1/3 of the pudding mixture. Cover with another 1/3 of the cake slices, the raspberry mixture and another 1/3 of the pudding mixture. Cover with the remaining cake slices and the remaining pudding mixture. Smooth the top and cover with plastic wrap. Refrigerate 4-8 hours. In a small bowl, combine strawberry puree with 2 tablespoons granulated sugar and stir to blend. Cut "lasagna" into squares. Spoon strawberry puree over each slice to resemble tomato sauce.

 

Notes: An easy, unusual dessert.
