Vegan Chocolate Peanut Butter Crisp Squares

This treat is purely vegan and purely delightful. Keep them as a snack around the house or take them to your next social function.
 

Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 1/3 cup creamy peanut butter (I prefer natural)
  • 6 cups crispy rice cereal
  • 12 oz pkg. semi-sweet or dark chocolate chips** (**check ingredients to be sure the chips are not made with milk or milk bi-products. Generic brands are often vegan.)

Method

In a large pot over medium-low heat, combine sugar and corn syrup. Stir often until mixture thins and becomes more translucent. Add peanut butter, stirring until smooth and creamy, but not too thick. Turn off heat, then stir in rice crisp cereal 2 cups at a time until of equal consistency. Pour into 9" x 13" pan, using hands or back of a tablespoon to press into pan. In a small saucepan, melt chocolate chips over low heat, stirring constantly. Pour melted chocolate over peanut butter crisp base, using a tablespoon to spread in a thin, even layer. Put all in fridge to set (about 30-60 minutes). Before serving, let bars come to room temperature to make cutting into squares easier. Enjoy!
