Upside Down Raspberry Sauce
This is a pretty sauce that is simple and elegant. It is a perfect end to a meal that will keep the hostess from being enslaved to the kitchen.
Ingredients
- 1 cup fresh or frozen raspberries, thawed
- 5 tbsp light brown sugar
- 2 1/2 tbsp butter
- 1/4 tsp salt
- Vanilla ice cream
- Fresh mint sprigs for garnish

Method
Microwave brown sugar, salt and butter on high in microwavable dish for 1 1/2 minutes. Delicately fold in raspberries and then microwave again for 1 minute. Spoon warm sauce into individual small dishes. Place a scoop of vanilla ice cream on top of sauce. Garnish with a sprig of fresh mint for a light, not overly sweet dessert.
