This is my take on two favorite cookies, hermits and chocolate chip cookies. Dried cherries add a tart flavor to balance the sweetness of the white and milk chocolate.
 

Ingredients

  • 1/4 pound butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated white sugar
  • 1 egg
  • 3/4 teaspoon pure vanilla extract
  • 1 1/8 cups unbleached white flour
  • 2 tablespoons ginger
  • 1 tablespoon cinnamon
  • 1 tablespoon cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup dried cherries or raisins
  • 6 ounces semisweet chocolate chips
  • 8 ounces bittersweet chocolate
  • 8 tablespoons unsalted butter
  • 12 ounce bag white chocolate chips
  • 4 tablespoons milk
  • Coarsely ground nuts, for garnish

Method

Preheat the oven to 350 degrees F. and grease cookie pan or baking sheet or spray with pan spray. Cream the butter, then gradually add the brown sugar and white sugar, beating until light and smooth. Beat in the egg and the vanilla. Mix the flour, ginger, cinnamon, cocoa powder, salt, and baking soda together and add it to the first mixture, blending well. Stir in the dried fruit and the chocolate chips. Divide into 24 cookie dough balls and place 12 on each cookie pan or baking sheet, with plenty of room between each cookie. Bake for 12 to 18 minutes or until lightly browned. Centers should still be somewhat soft. Let cool for 5 minutes and, using a spatula, carefully remove cookies to baking rack. Makes 2 dozen cookies. Place cooling rack on cookie pan or baking sheet and set aside. Melt the chocolate and butter together in a double boiler. Melt white chocolate with milk to a spreadable consistency. Dip each cookie in the white chocolate and set onto cooling rack, leaving room between each cookie. Rinse out double boiler, dry, and melt chocolate with butter and dipping process with chocolate, allowing white chocolate to show. Sprinkle nuts on glazed portion of cookies and allow to cool. Cooling in refrigerator will give chocolate a shiny appearance.
