Tropical Strawberry Tiramisu

In this variation of tiramisu, the ladyfingers are sprinkled with pineapple juice and rum, layered with sliced strawberries, and spread with a mascarpone mixture.
Ingredients
- 2 cups sliced fresh strawberries
- 4 tsp light brown sugar
- 3 oz. package of soft ladyfingers (about 24 halves)
- 1/4 cup pineapple juice
- 1/4 cup light rum
- 8 oz. mascarpone cheese
- 4 tbsp. (1/4 cup) whipping cream
- 1 tsp. vanilla extract
- 1 tbsp. powdered sugar
- (Dutch Process) cocoa powder, for garnish

In a small mixing bowl, toss the sliced strawberries with the light brown sugar; set aside. Arrange 12 ladyfinger halves in the bottom of a 9x5" glass dish. Place them as close together as possible without overlapping; trim to fit, if necessary. In a small measuring cup, mix the pineapple juice and rum. Drizzle some of this over the ladyfingers; set the rest aside. In a medium mixing bowl, combine the mascarpone cheese, whipping cream, vanilla and powdered sugar. Beat on low speed until all ingredients are blended and slightly thickened. Layer half of the strawberries over the ladyfingers, then spread half of the mascarpone cheese mixture over the top; gently smooth the surface. Place the second layer of ladyfingers on top, and drizzle a little of the pineapple juice and rum mixture over them. Spoon the rest of the strawberries on and spread with the remaining cheese mixture. Cover with plastic wrap and refrigerate for 8 hours or overnight. To serve, cut into 4 squares, place on individual dessert plates and dust with cocoa powder.
