Tropical Christmas Brittle

This candy has a unique flavor that is deliciously different than traditional holiday brittle.
 

Ingredients

  • 1 cup sweetened flaked coconut, lightly toasted
  • 1 cup slivered almonds, lightly toasted
  • 2 teaspoons melted butter
  • 2 1/3 cups granulated sugar
  • 1/4 cup corn syrup
  • 1 teaspoon orange zest
  • 1/2 cup orange juice
  • 2 Tablespoons butter

Method

Use 1 teaspoon melted butter to generously coat a 15 x 10 inch jellyroll pan. Sprinkle evenly with coconut and almonds and set aside. Using paper towel, coat inside of a heavy 3 quart saucepan with remaining teaspoon of butter. Stir sugar, syrup, zest and juice together in saucepan. Cook over medium heat to 300 degrees, stirring often. Remove from heat, stir in butter. Pour in thin stream over coconut and almonds. Cool completely then crack into pieces. Store in an airtight container.
