Triple Fruit Crunch Delight

This dish makes a great snack or dessert. Add your favorite fruit or flavor of jam to really spice things up a bit.
 

Ingredients

  • 1 qt cleaned and halved fresh strawberries
  • 2 bananas sliced thinly (spray lightly with lemon juice to prevent discoloration)
  • 1 15 oz can mandarin oranges, drained
  • 16 oz vanilla yogurt
  • 4 oz cream cheese, softened
  • 1 cup sifted confectioner's sugar
  • 2 tsp pure vanilla powder
  • 1/2 cup strawberry jam, melted and cooled
  • 1 cup quality granola cereal (nature path pumpkin/flaxseed granola cereal)
  • 1/2 cup chopped walnuts
  • Whipped cream

Method

Combine fruit into large bowl, set aside. Mix yogurt, softened cream cheese, sifted confectioner's sugar and vanilla powder on low-med speed until well blended. Layer in individual decorative cups or trifle bowl in following order: 1/4 cup yogurt mixture, drizzle melted jam, granola, nuts, fruit, then 1/2 cup yogurt mixture, jam, granola, nuts, fruit. Continue layering with top layer ending in fruit. Top with whipped cream and serve.

 

Notes: Everything except bananas and jam can be made ahead of time. Melt jam in microwave safe container at 10 second intervals until melted. Cool about 5 minutes. For added flair, add 1 tbsp raspberry balsamic vinegar to jam.
