Ingredients:
1× 7.4 oz pkg | Chocolate Chocolate Chip Muffin Mix |
2 Tbsp | Extra Light Olive Oil |
1 Tbsp | Butter |
2 Tbsp | Sugar |
1 | Egg |
1 tsp | Vanilla Extract |
⅓ cup | Coarsely Chopped Pecans |
⅓ cup | White Chocolate Chips |
⅓ cup | Dried Cherries, roughly chopped |
Directions:
In a medium bowl, cream together oil, butter and sugar. Mix in egg and vanilla. Add muffin mix, stir well, and fold in nuts, white chocolate chips and cherries. On a parchment lined cookie sheet, flatten dough with greased fingers, into a 9 X 4 inch flat log about 1/2 inch thick. Bake at 375 degrees for 20 minutes. Remove, slice into 10-12 pieces, cut on the diagonal, and turn pieces on one side. Cook 5 minutes, flip to the other side and cook 3-5 more minutes. Stay alert and watch carefully so edges do not burn. Cool completely, and enjoy with tea.
