A Chocolate crust is topped with a homemade chocolate pudding which is topped by homemade chocolate whipped cream. Triple chocolate.

  • Servings: 8

¼ cup Butter, melted
1¾ cups Crushed Chocolate Wafer Cookies
1½ cups Sugar, divided
2 Tbsp Unsweetened Cocoa Powder
⅓ cup Cornstarch
¼ tsp Salt
2 cups Whole Milk
1 cup Half & Half
4 oz Unsweetened Chocolate
2 oz Bittersweet Chocolate
4 Egg Yolks, slightly beaten
1 Tbsp Vanilla Extract
⅓ cup Unsweetened Cocoa Powder
½ cup Sugar
½ cup Whipping Cream
1 cup Frozen Whipped Topping, thawed
1 tsp Almond Extract

Heat oven to 325 degrees. Mix melted butter, crushed cookies, 1/4 cup sugar, and cocoa. Press into 9 inch pie pan. Bake for 10-15 minutes and cool on a rack. In a large heavy saucepan, mix remaining sugar, cornstarch, and salt. Gradually stir in milk with half and half until smooth. Add unsweetened and bittersweet chocolate, then bring to a boil over medium heat, stirring constantly, then lower heat. Add a little of the chocolate mixture to the egg yolks to temper. Return eggs to chocolate mixture and cook over low heat 2-3 more minutes. Stir in vanilla.

Cool slightly and pour into prepared pie shell. Cover pudding with plastic wrap and chill. Prepare chocolate whipped cream in a large bowl. Mix well the cocoa and sugar. Stir in cream and whipped topping. Chill bowl of cream and beaters. Whip until stiff peaks form. Top chilled pie with chocolate whipped cream and chocolate shavings. Chill in refrigerator several hours to set.
