Triple Chocolate Delight Cupcakes

The melted dark chocolate keeps the cake moist while the coffee enhances the flavor of the chocolate.
 

Ingredients

  • Cake:
  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 3 eggs
  • 3/4 cup of butter, softened
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate cocoa powder
  • 2 oz dark chocolate, melted
  • 2 teaspoons brewed coffee
  • Frosting:
  • 6 tablespoons of shortening, not butter flavored
  • 1/2 cup butter, softened
  • 1 cup white chocolate chips, melted
  • 1 teaspoon pure vanilla extract
  • 4-4 1/2 cups powdered sugar
  • Garnish:
  • Dark chocolate shavings
 
Method

Preheat oven to 350 degrees. Cream together butter and sugar at medium speed intil fluffy. Add 1 egg at a time, beating 20 seconds per egg. Add vanilla, brewed coffe, and melted chocolate, then beat two minutes or until well combined. In a separate bowl, sift together flour, baking soda, baking powder and salt. Alternately, add flour mixture and milk into butter mixture. Distribute between two cupcake pans (filled with paper liners) and bake 17 minutes or until tops of cupcakes spring back when touched. Frosting: Cream together shortening and butter until well combined. Add vanilla and melted white chocolate. Slowly incorporate powdered sugar until a slightly thick consistency is reached. Frost cupcakes and top with chocolate shavings.
