Tiramisu


This coffee-flavored dessert is made with mascarpone cheese. Ladyfingers and whipped mixture are layered and topped with grated chocolate.



Ingredients:

  • 1 pound mascarpone cheese  
  • 1/4 cup superfine or granulated sugar
  • 1 tablespoon rum (or cold coffee)  
  • 1 cup heavy cream  
  • 24 ladyfingers, split  
  • 1/4 cup cold, strong, coffee (decaf or regular)
  • Semisweet chocolate square        

Method

Combine cheese, sugar and rum (or coffee) in bowl and beat until smooth. Whip cream to soft peaks and fold into cheese mixture. Pour remaining coffee into pie plate for easy dipping. Lightly moisten 24 ladyfinger halves on one side in coffee and arrange in single layer in a 9- or 10-inch square or round dish to fit. Spread half the cheese mixture over ladyfingers; grate a little of the chocolate square over the cheese mixture; repeat layers of coffee-dipped ladyfingers, cheese mixture and chocolate. Cover and refrigerate at least 1 hour or overnight.

Notes: No worry from using raw eggs with this recipe, since it doesn't contain eggs! Also, people who can not have regular coffee can use de-caf instead.
