Tasty Spinach Balls

Ingredients:
| 1 bag | (16 Oz) Chopped Spinach, thawed * |
| 1 cup | Chopped Sweet Yellow Onion |
| 1½ cups | Seasoned Croutons |
| ½ cup | Shredded Parmesan Cheese |
| 2 | Medium Size Eggs |
| 2 Tbsp | Light Olive Oil |
| * I Used Freash Spinach That I Boiled. |
Directions:
1. Heat the oven to 350°F. Line a baking sheet with foil, spray with no-stick spray and set aside.
2. Defrost the spinach in a microwave safe dish, cover with plastic wrap and microwave for 3 minutes. Place the spinach in a colander or strainer over a bowl and press with the back of a large spoon to squeeze out all of the liquid. Set spinach aside in a medium size mixing bowl.
3. Combine the chopped onion and croutons in a food processor bowl and process for 30 seconds or until croutons are crumbled fine.
4. Combine the processed crouton and onion mixture, Parmesan cheese, eggs and olive oil and spinach in a bowl and mix well. Season to with salt and pepper if needed. Form the spinach into 2-inch balls and place on the prepared baking sheet. Bake for 15 minutes.
