Taffy Apple Pie

This homemade caramel apple pie has the added flavor of salted peanuts to make it very special.
 

Ingredients

  • Streusel Topping:
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter
  • 1/3 cup all purpose flour
  • 1/4 teaspoon cinnamon
  • Pastry for 2 crust pie, recipe follows
  • Confectioners' sugar
  • Filling:
  • 6-8 medium apples, cored and sliced
  • 1/2 pound caramels, heated in a double boiler until softened, but not completely melted
  • 1/2 cup chopped Spanish salted peanuts
  • Pastry for 2-crust pie:
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 cup solid vegetable shortening
  • 1/4 cup ice water

Method

Blend all streusel ingredients together until crumbly and set aside. Line a 9 inch pie pan with a bottom crust. Place one layer of apples in prepared shell. Spread on a layer of caramels and sprinkle with peanuts. Repeat with 2 more layers until shell is filled to top, ending with peanuts. Scatter on the streusel. Cover with top crust and flute edges. Make several slits on top of pie and bake in a 350 degree oven for 1 hour or until golden. Let cool then sprinkle top with confectioners' sugar. Crust: Place flour and salt in a mixing bowl. Cut in shortening with a pastry blender until crumbly. Drizzle in water and stir with a fork until mixture holds together. Roll out half of crust on a lightly floured surface, or between 2 pieces of waxed paper. Ease pastry into 9 inch pie plate. Follow directions above for filling and finishing pie.
