Sweet Potato-Pumpkin Pie


Mashed canned sweet potatoes are combined with pumpkin in this pie. It also has cinnamon, pumpkin pie spice and a hint of maple syrup.



Ingredients:

  • 1 29 oz. can pure pack pumpkin (pumpkin pie mix)
  • 1 large can sweet potatoes
  • 1 12 oz. can evaporated milk
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1/4 cup maple syrup or good quality syrup
  • 2 deep-dish (or 4 regular-size) frozen pie crusts
  • Whipped topping

Method

Mash sweet potatoes. In large bowl mix sweet potatoes, pumpkin, milk, eggs, cinnamon, pumpkin pie spice, and vanilla until smooth. Pour into pie crust. Bake @ 425 for 15 minutes then turn down oven to 350 for an additional 40-45 minutes until filling is set. Cool. Serve with whipped topping.

Notes: Sweet Potatoes and Pumpkin compliment each other very well!

Number of servings: 2 deep dish or 4 ready crust
