Sweet Potato Custard Cups


Mashed, cooked sweet potatoes are combined with evaporated milk, eggs, cornstarch, and flavored with pumpkin pie spice and orange peel to make these individual custards.



Ingredients:

  • 2 cups sweet potato puree
  • 2 can evaporated milk
  • 4 large eggs
  • 2 tbsp cornstarch
  • 2/3 cup packed brown sugar
  • 1 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 1 tsp grated orange peel

Method

Preheat oven at 350 degrees. Grease 12 custard cups and place in large baking pans. In bowl put all ingredients together and blend with electric mixer or in blender. Pour mixture into custard cups. Pour hot water halfway in baking pans. Bake for 30 to 45 minutes or until custards are just set and knife comes out clean.

Notes: Serve custards with dollop of whipped cream or sweetened sour cream, sprinkle with nutmeg or orange peel on top.
