Sweet Phyllo Apple Pecan Puffs


Chopped apples with cinnamon & sugar are rolled inside layers of phyllo dough that's drizzled with caramel topping and baked.



Ingredients:

  • 4 apples (macintosh or any sweet apple)
  • 2 Tbsp lemon juice
  • 2 Tbsp cinnamon
  • 1/2 cup sugar or Splenda
  • 16 oz package of phyllo dough (thawed)
  • 12 oz jar caramel topping
  • 10 oz package chopped pecans
  • 12 oz package semisweet chocolate morsels
  • Cooking spray

Method

Preheat oven to 375F. Peel and chop apples well. Place in bowl with lemon juice. Stir. Add cinnamon and sugar to apples. Mix well. Set aside. Spread out 8 sheets of thawed Phyllo dough on a large counter. Spray tops of each sheet with a light coating of cooking spray. Spread about 2 Tbsp of caramel topping onto each of the 8 phyllo sheets, using a rubber spatula. Sprinkle about 3-4 Tablespoons of pecans on top of each caramel layer. Using 8 more sheets of Phyllo dough, place one sheet on top of each caramel layer. Spray lightly with cooking spray. Sprinkle each layer with about 1/4 cup of apple mixture. Top each apple layer with another phyllo sheet; spray lightly with cooking spray. Starting at one end, carefully roll up each stack--like rolling up Jelly rolls. Fold ends under and place on baking stone or baking sheet. Bake at 375F about 25 minutes or until golden brown. During about the last 5 minutes of baking, place chocolate morsels in microwave-safe dish. Heat in microwave about 30 seconds at a time, stirring until melted. Remove pastries from baking sheet and transfer to serving platter. Cut each one in half. Drizzle melted chocolate morsels and additional caramel topping on pastry according to your liking. Sprinkle each pastry with a generous amount of chopped pecans. Serve warm.

Notes: Add a scoop of vanilla ice cream on top of each pastry just before serving for an extra-special treat. If you wish, you may also top the ice cream with some caramel, melted chocolate and pecans. Add a stemmed cherry for a beautiful holiday dessert.
