Sweet Kugel


This baked dessert is made with wide egg noodles, combined with cream cheese, sour cream, and crushed pineapple, and flavored with grated orange peel. Egg yolks are added and the beaten whites are folded in.



Ingredients:

  • 1 lb. wide egg noodles
  • 1 tsp. salt
  • 1 tbsp. cooking oil
  • 8 oz. cream cheese
  • 1 cup sugar
  • 1 cup sour cream
  • 6 eggs, separated
  • 1 15 oz. can crushed pineapple, drained
  • 2 Tablespoons grated orange rind

Method

Cook noodles with salt and oil. Drain. Beat sugar and cream cheese together. Add the sour cream. Lightly beat the egg yolks. Add these to the creamy mixture, along with the crushed pineapple, orange rind, and noodles. Beat the egg whites until stiff. Fold into the creamy mixture. Pour mixture into a well-buttered 10x12x2" pan. Bake at 375F for about 35 minutes or until top starts to brown.

Notes: It's easier if you soften the cream cheese before you work on it. Either leave it out for a couple of hours before you start cooking, or nuke it on high for 30 to 60 seconds (I generally do it for 30 seconds first, check its consistency, then if necessary repeat the process.) Be sure not to cook the cream cheese. You can leave out the orange rind and add a little bit of orange oil. You can add a little cinnamon and a touch of vanilla to the kugel. This can be done instead of using orange rind, or in addition to the orange rind. Obviously, you can substitute other citrus rind for the orange rind.
