Sweet Surprise Potato Pie

Make a sweet potato filling by mashing sweet potatoes with butter, sugar, milk and lemon. Turn into pie shells and bake.
 

Ingredients

  • 1 pound sweet potatoes, peeled and cut up
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 cup milk
  • 3 tablespoons lemon juice
  • 1/2 tsp packed brown sugar
  • 2 unbaked 9-inch pie shells

Method

Cook sweet potatoes in lightly salted boiling water for 20 to 25 minutes or until tender; drain and mash. Stir in butter, granulated sugar, milk and lemon juice. Spoon into pie shells then sprinkle brown sugar on top of each. Bake in a 375 degree F. oven for 1 hour.

 

Notes: Serve with vanilla ice cream.
