Sweet Potato Pie

Turn classic sweet potatoes into a tasty pie with this recipe. Let it cool overnight in the fridge and serve it for dessert.
Ingredients
- 1 cup sugar
- 1-1 1/2 sticks butter
- 3 eggs
- 2 lbs. sweet potatoes
- 6 oz. evap. milk
- 3 T flour
- 1 t vanilla
- 1/2 to 3/4 ground fresh nutmeg

Method
Beat butter and sugar and add the eggs. Skin hot, boiled till soft potatoes and add to sugar mixture. Add milk, flour, vanilla, nutmeg and blend till smooth. Do not scrape beaters. Pour into baked pie shell and bake at 400 till crust begins to turn brown (10 min) then turn oven down to 350 and bake for half hour. Check for doneness. Refrigerate overnight.
