Sweet Potato Pecan Pie

This pie uses mashed sweet potatoes, combined with brown sugar, cinnamon, milk and eggs. The topping is margarine, brown sugar and pecans sprinkled over the partially baked pie.
Ingredients
- 1 1/2 cups mashed, cooked sweet potatoes
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger (optional)
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 2 beaten eggs
- 1 unbaked 9-inch pie shell
- TOPPING:
- 1/4 cup margarine, softened
- 1/2 cup brown sugar
- 3/4 cup chopped pecans

Method
Combine all the above ingredients, except Topping ingredients. Cook in double boiler until thick and creamy; cool. Fill unbaked pie shell. Bake at 350 degrees for 20 minutes. Meanwhile combine ingredients for Topping and sprinkle over pie. Return to oven and continue baking for 25 minutes more or until custard is firm. Serve with whipped cream, if desired.
