Sweet Mango Pie

This homemade pie is layered with fresh mangoes, cinnamon and nutmeg seasonings, tapioca and rich butter.
 

Ingredients

  • 5 big ripe mangoes
  • 5 tbsp prepared tapioca
  • 1 stick butter
  • 1 cup white sugar
  • 2 tbsp cinnamon
  • 2 tbsp nutmeg
  • Lemon zest
  • Pie Crust:
  • 2 cups flour
  • 1 cup shortening
  • 2 egg
  • s1 tsp salt
  • 1/2 cup water

Method

First make the pie crust. In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 4 hours or overnight. Roll out dough on a floured counter. Don't over work it. Use as directed in pie recipe. Slice mangoes into small pickle like strips, take out seeds and set aside. Mix sugar, cinnamon and nutmeg, set aside. First layer pie crust on large pie tin and start layering first with the mangoes the second layer 4 butter slices, sift 2 tbsp of nutmeg, sugar and cinnamon. Sift 2 tbsp tapioca and then start with the second layer. Continue layering until the pie tin is full, and then add the lemon zest on top. Cover with pie crust dough on top and slice a small cross with a kitchen knife in the middle top of pie crust. Cover to let steam out while baking wash pie crust with 2 egg yolks and bake for 40 minutes at 350 degrees.
