Summertime Strawberry Trifle

This dessert is light and perfect for a hot summer evening. This is a dessert that can be made ahead of time, even the night before.
 

Ingredients

  • 24 shortbread cookies
  • 1 3 oz pkg strawberry flavor gelatin
  • 20 marshmallows
  • 1/4 cup lemonade
  • 1 1/2 quart strawberry ice cream, softened
  • 1 pint ripe strawberries, hulled
  • 1 tablespoon kirsch or ginger ale
  • 1/2 cup granulated sugar

Method

Combine gelatin, marshmallows and lemonade in small sauce pan. Bring to a boil and stir until smooth, about two minutes. Remove from heat. Place ice cream in large mixing bowl. Beat until fluffy, about 30 seconds. While beating slowly add gelatin mixture. Layer shortbread and ice cream mixture in 9 x 9 inch or larger glass baking dish and chill. Place half of strawberries, kirsch and sugar in blender. Process on high for 45 seconds. To serve, spoon trifle into dessert dishes. Top with strawberry sauce. Garnish with remaining strawberries.
