Summer Peach Pie

What says summer better and tastier than peaches?

Ingredients:

• 3/4 cup all purpose flour
• 1 tsp baking powder
• 1 tsp salt
• 1 small pkg vanilla pudding, cooked variety
• 1 egg
• 1/2 cup milk
• 3 tbsp melted butter
• 16 oz sliced peaches
• 8 oz soft cream cheese soft
• 1 cup sugar
• 3 tbsp peach juice
• 3 tbsp sugar
• 1/2 tsp cinnamon

Method

Preheat oven to 350 degrees and grease a 9 inch pie plate. Combine flour, baking powder, salt, pudding mix, milk and butter and beat for 2 minutes. Pour into greased 9 inch pie plate. Drain peaches saving juice. Place peaches on top of batter. Beat cream cheese, sugar and peach juice for 2 minutes. Spread on top of peaches leaving a 1 inch space around edge. Stir cream cheese and peach topping gently and sprinkle cinnamon and sugar all over top. Bake 30 minutes then cool 2 hours or more.
