Sugar and Spice Cherry Raisin Pie

Tart red cherries, raisins and walnuts are combined with tapioca, orange juice concentrate, cinnamon, allspice and ginger in this double-crust pie.
 

Ingredients

  • 2 cup flour
  • 2/3 cup shortening
  • 1/2 teaspoon salt
  • 6 tablespoons cold water
  • 2 1/2 cups frozen tart red cherries (or canned, drained well)
  • 1 1/4 cups raisins
  • 2 tablespoons orange juice concentrate (undiluted)
  • 3/4 cup granulated sugar
  • 3 tablespoons quick-cooking tapioca
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/3 cup chopped walnuts
  • Few drops red food coloring (optional)
  • 2 tablespoons butter, melted

Method

Preheat oven to 375 degrees. Make Crust: In medium bowl, combine flour and salt. Cut in shortening. Sprinkle with cold water, tossing to moisten. Form into a ball; divide in half. Roll each on a floured cloth into a 12" circle. Place one circle of pastry into a 9-inch pie pan. Make Filling: In a large mixing bowl, mix together all filling ingredients. Let sit for 20 minutes, stirring occasionally. Spoon filling into prepared pie shell. Place second crust over filling, and trim to fit. Crimp edges decoratively, and/or trim with leftover crust cutouts. Cut vents for steam to escape. Sprinkle lightly with sugar, if desired. Place into preheated oven, and bake for 45-55 minutes, or until filling is bubbly and crust is golden.
