Streusel Topped Tropical Apricot Pie


A quick and easy fruit "pie" using pantry staples--canned fruit, a yellow cake mix, coconut and almonds.



Ingredients:

  • 1 (21 oz) can apricot pie filling
  • 1 (20 oz) can crushed pineapple in juice
  • 1 (18.25 oz) pkg yellow cake mix
  • 2 cups flaked sweetened coconut
  • 2 cups slivered almonds
  • 1 cup (2 sticks) margarine, melted

Method

Heat oven to 325 degrees F. Divide pie filling between two 9 inch pie plates. Add half of pineapple with juice to each. Sprinkle half of cake mix on each. Sprinkle each with 1 cup coconut and 1 cup almonds. Drizzle each with 1/2 cup melted margarine. Bake for 35-40 minutes until top is golden brown. Makes two 9 inch pies.

Notes: Use other flavors of pie filling and other types of nuts for delicious variations.
