Strawberry/Rhubarb Dumplings

Sweet, cinnamony dumplings steamed in a delectable solution of rhubarb and strawberries for a unique dessert experience.
Ingredients
- Strawberries - 1 c.
- Rhubarb - 1/2 c.
- Water - 1/4 c.
- Sugar - 1/4 c.
- Cornstarch - 2 Tbsp.
- Dumplings Biscuit mix - 1/2 c.
- Sugar/cinnamon mix - 1 1/2 Tbsp.
- Milk - 2-3 Tbsp.

Method
1. Mix fruit, water, sugar, cornstarch in 3 quart saucepan. 2. Slowly bring to boil, stirring occasionally, until juice thickens, then reduce heat to simmer. 3. In small bowl, mix biscuit mix, sugar/cinnamon, & milk to form soft dough. 4. Drop dough by tablespoon (approx. 5-6 dollops) into simmering fruit. 5. Cover & simmer for 20 min. (NO PEEKING...the steam cooks the dumplings.) 6. Gently pour into serving dish & serve with sweet cream.
Notes: 1. Keep large bags of frozen fruit handy for last minute preparation. 2. Equally good made with seasonal fresh fruits, such as, peaches, blueberries, apples, or cherries. 3. Can be served breakfast, lunch, or dinner, hot or cold!
