If a fancy dessert is on the menu for your guests try these crepes.
Sprinkle gelatin over 3/4 cup of juice in a small sauce pan and let stand 5 minutes, then over low heat stir to dissolve gelatin. Add morsels and cream cheese, stirring over low heat until smooth and well blended. Remove from heat and whisk in 1/4 cup of jam, sour cream and extract. Cool then chill. For compote stir 1 tbsp juice and the rest of jam in a medium sauce pan over low heat until jam melts, then stir in strawberries, zest and mint. Cool then chill. To serve spoon mousse down center of each crepe. Fold crepes in half then in half again to form a triangular shape. Place 2 filled crepes on each plate and spoon compote over top, garnish and serve.
