Strawberry Cheesecake Pizza

A sugar cookie crust is topped with a mixture of cream cheese and powdered sugar, sliced strawberries and pecans.

Ingredients:

• 1 cup butter, softened
• 2 cups all purpose flour
• 1 cup granulated sugar
• 2 8 oz pkgs cream cheese, softened
• 4 cups powdered sugar, with 1 cup set aside
• 5 cups fresh strawberries, sliced and drained
• 1 cup chopped pecans
• 2 tbsp vanilla
• 2 tbsp lemon juice

Method

Mix butter, flour, sugar and pecans. Press into a 12 inch pizza pan and bake at 350 degrees for 20-30 minutes then allow to cool. In a large bowl, mix cream cheese, 3 cups powdered sugar and vanilla. Blend well and press onto cooled crust. Mix strawberries, remaining powdered sugar and lemon juice. Spoon onto cream cheese layer and chill. Cut into triangular slices.

Notes: Drain strawberries well.
