Strawberry Surprise

Fresh strawberries, toasted crossaints and a light, lemony cream cheese filling.
Ingredients
- 20 medium to large strawberries
- 4 oz cream cheese softened
- 4 oz sour cream
- 1/2 cup powdered sugar
- 1 tsp pure lemon extract
- 5 croissants sliced & tosted
- Frest mint as garnish

Wash strawberries. Slice top 1/4 inch off strawberries. Using a strawberry scoop or small spoon, scoop out middle section (don't scoop too much as strawberries need to be firm to fill). In a medium mixing bowl mix cream cheese & sour cream. Once it is creamed, mix in powdered sugar & lemon extract. Stuff stawberries with mixture and replace stemmed lids. Slice & toast crossaints. Place four strawberries on a plate, add toasted crossaints on top. Then, add a scoop of the cream cheese filling to top of the crossaints so that a little oozes onto the plate. Add mint sprig for garnish.
Notes: Use light cream cheese and sour cream if you want to cut calories.
