Strawberry Shortcake Dessert

This shortcake dessert has slices of pound cake placed on top of a cocoa-cream cheese mixture, with sliced strawberries and crystallized ginger spooned on top.
Ingredients
- Frosting:
- 1 3-oz pkg cream cheese, at room temperature
- 1/2 stick (1/4 cup) unsalted butter, at room temperature
- 2 tablespoons milk
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 1/4 cup strawberry jam or jelly
- 1/2 cup Dutch cocoa
- 1 pound box powdered sugar

- 1 pound frozen strawberries
- Sugar, to taste
- 3/4 cup strawberry jam or jelly
- 1/4 cup crystallized ginger, finely chopped
- 3 to 4 tbsp Cointreau

- Whipped cream

Frosting: Whip cream cheese and butter in a mixing bowl. Blend in milk, vanilla, salt and strawberry jam. Gradually beat in cocoa and powdered sugar. Whip until frosting is smooth and creamy. Set aside. ... Thinly slice strawberries and add sugar to taste. Add strawberry jam or jelly, ginger and 1 to 2 tbsp of the Cointreau. Mix well with a spoon and set aside. ... Presentation: Divide Frosting into six portions and spread in a circle on each of six dessert plates. Place a slice of pound cake on top of each and sprinkle some of the remaining Cointreau on each slice. Spoon strawberry mixture on top of cake slices. Place a spoonful of whipped cream on top of strawberries. Garnish with fresh mint leaves.
