Strawberry Shortbread Vanilla Cream Parfaits

Easy to make, elegant and delicious, this dessert has it all.
Ingredients
- 1 4 serving size pkg instant vanilla pudding mix, fat free and sugar free
- 1 1/2 cups 1% milk
- 4 ounces light cream cheese, softened
- 3 cups sliced strawberries, fresh or frozen and slightly defrosted
- 1 tablespoon balsamic vinegar
- 3 tablespoons brown sugar
- 1 cup shortbread cookie crumbs
- 4 sprigs fresh mint, optional

Method
In a medium mixing bowl, whisk pudding mix into milk. Add cream cheese and beat at medium speed about 2 minutes or until thoroughly blended. Cover and refrigerate until ready to serve. In a small bowl, toss all but 1/4 cup strawberries with vinegar and sugar. Cover and refrigerate until ready to serve. In 4 serving dishes, layer pudding mix, strawberries and cookie crumbs. Repeat another layer and finish with a dollop of pudding and a few slices of remaining strawberries on top. Garnish each parfait with a sprig of mint, if desired.
