Strawberry Relish and Ice Cream

Spice up your plain old vanilla ice cream with a homemade strawberry and pear relish. The real kick comes from the banana peppers.Ingredients
- 1 cup mandarin oranges
- 1/2 cup Grand Marnier liqueur or orange juice
- 1/4 cup white corn syrup
- 1 teaspoon kosher salt
- 3 cups strawberries, fresh or frozen, rinsed, patted dry, and chopped
- 3 pears peeled, cored, and coarsely chopped
- 1 tablespoon golden banana peppers, drained, seeded and finely chopped
- 2 cups chopped toasted English walnuts chopped
- 8 large scoops of a good vanilla ice cream

Drain mandarin oranges, saving liquid. In a medium size, heavy saucepan, over medium heat, place the saved orange liquid, Grand Marnier, corn syrup and salt. Warm ingredients until blended, do no boil. Set aside. Place in a blender or food processor along with the oranges and chopped pears and pulse until coarsely chopped. Transfer to a large bowl, add banana peppers and English walnuts, toss until blended, pour sauce over top and toss till coated. Serve immediately. If you plan to serve this later, leave walnuts out and sprinkle on before serving. Place a scoop of ice cream in 8 dessert dishes, spoon relish on top and serve.
