Strawberry Pudding
A cool and creamy fruit dessert with cream cheese, whipped cream, strawberries and a vanilla wafer crust.
Ingredients
- 1 1/2 qts fresh strawberries
- 2-3 lb bags confectioners sugar
- 4-6 oz pkgs cream cheese
- 1 cup softened butter
- 1 large egg
- 1 Tbsp dark rum (or equivalent pure vanilla extract)
- 16-24 oz whipped cream (or Cool Whip whipped topping)
- 3-4 cups crushed vanilla wafers (for crust)

Clean and core strawberries; halve and set aside. Spread crushed cookies in large rectangular plastic storage container and set aside. In large mixing bowl, combine powdered sugar, butter, egg, cream cheese, dark rum (or vanilla). Mixture should be VERY thick; if not, slowly add more powdered sugar until desired consistency. Spread 'pudding' mixture over cookie crust. Layer strawberries over 'pudding,' reserving a few for decoration. Spread whipped cream over berries, and decorate with a few halved berries. Chill at least 2-hours before serving.
Notes: This recipe has been a family favorite for at least three generations. Grandma always brought some variation of this recipe to our annual summer reunions throughout my childhood, and always used her own sugar cookies as the crust. I have to admit, they are much better than vanilla wafers, but have found the wafers are an excellent substitute and timesaver. Over time, my siblings and I have also used other fresh berries (especially good with fresh, juicy blackberries). For variety, we have also found that other fruits provide renewed interest, especially from the younger set. Pineapple, mandarin oranges and even fresh mango are equally delicious.
