This tasty pancake like recipe is sure to be a hit at your next breakfast or brunch. What a great way to use those strawberries from the farmer's market.
 

Ingredients

  • 4 eggs, beaten well
  • 1 cup milk
  • 2 1/2 cups sugar
  • Pinch of salt
  • 2 cups flour
  • 1 pint strawberries, hulled
  • 1 8 oz pkg strawberry whipped cream cheese
  • Powdered sugar for dusting

Method

Add strawberries and 1 cup sugar, place in a saucepan to cook over medium heat, for 10 minutes, until syrup is produced. In another bowl, whip 1 cup sugar and cream cheese until creamy, then set aside. Add eggs, milk, 1/2 cup sugar and salt then mix well. Add flour until batter resembles cake batter. Using a small frying pan, add 1/2 cup batter to pan and fry like a pancake, then continue until all batter is used. Lay pancake down, spread cream cheese mixture on top and roll up. Lay on a plate and top with strawberry sauce and powdered sugar.
