Strawberry Muffins

Sweet, fresh strawberries baked in moist muffin with a crisp cinnamon and sugar topping--makes a great snack, dessert or breakfast on the go.

  • Servings: 12

Ingredients:

Topping:
½ cup Sugar
½ tsp Cinnamon
⅓ cup All Purpose Flour
¼ cup Cold Butter
Batter:
½ cup Sugar
¼ cup Butter, at room temperature
1 Egg
2¼ cups All Purpose Flour
4 tsp Baking Powder
½ tsp Salt
1 cup Milk
1 tsp Vanilla
1½ cups Fresh Strawberries, roughly chopped
Powdered Sugar, for garnish

Directions:

Heat oven to 375 degrees. Line 12 muffin cups with muffin cup liners. Add vanilla to the milk. In a small bowl, mix sugar, cinnamon, flour and butter until crumbs form, then reserve. In a mixing bowl, cream together the sugar and butter until fluffy, then beat in the egg. Mix together the flour, baking powder and salt. Add the dry ingredients to the sugar and egg mixture, alternately with the milk mixture, beginning and ending with the flour mixture. Fold in the strawberries. Spoon batter into lined muffin cups and sprinkle crumbs over batter. Bake for 20-25 minutes, or until golden brown. Dust with powdered sugar and serve.
