Strawberry Lush

A mixture of cream cheese, powdered sugar and Cool Whip is spread over a baked crust. Crust is spread with strawberry pie glaze.
 

Ingredients

  • 1 c. self-rising flour
  • 1 stick margarine or butter (1/2 cup), softened
  • 1, 8oz. pkg. cream cheese
  • 1 c. thawed Cool Whip
  • 1 c. confectioners sugar
  • 1 quart fresh strawberries
  • 1 pkg. (12 oz) strawberry pie glaze
  • About 2 cups additional thawed Cool Whip
  • Mint leaves and additional sliced berries for garnish

Method

Mix self-rising flour with softened margarine; spread into bottom of 13x9 pan. Bake at 350 for 15 min. until edges are golden brown. Let cool completely. Mix cream cheese, the 1 c. Cool Whip, and the confectioner?s sugar until smooth and fluffy; spread over cooled crust. Clean and slice strawberries and drain well. Spread strawberry pie glaze over cream cheese mixture; arrange sliced strawberries over the glaze layer; spread with remaining Cool Whip. Chill. Garnish with a strawberry and mint leaf.

 

Notes: Be sure not to over bake the crust, the edges will be light golden brown. When spreading the cream cheese over the crust, be gentle; the crust is very delicate & flaky. This recipe is very versatile and can be made with a lemon, chocolate, or coconut filling, in place of the strawberry. A wonderful light and refreshing dessert for any occasion.
