|Ice Cream Pie|
|2 cups||Puffed Rice Cereal|
|1 cup||Chopped Walnuts|
|½ cup||Butter, melted|
|1 cup||Brown Sugar|
|½ gallon||Vanilla Ice Cream, softened|
|1 pkg||Unsweetened Strawberry Drink Mix|
|⅓||Heaping Cup Instant Clear Jel|
|3 cups sliced||Fresh Strawberries|
Place cereal, coconut and walnuts in a bowl, then stir well and set aside. In microwave or a saucepan, melt butter, then stir in brown sugar and bring mixture to a boil. Pour this mixture over the cereal mixture and stir well. Place 2/3 of mixture in a 13 X 9 glass pan. Top with the softened ice cream. Top with the remaining cereal mixture. Freeze until firm. Meanwhile, prepare Strawberry Drizzle. In a mixing bowl, combine drink mix, sugar and clear jel, then stir well. Add water and stir until smooth, then fold in the strawberries. Drizzle over ice cream pie before serving.
This recipe is a must make during strawberry season. But we like it so much, that we make it year round with frozen strawberries. The Strawberry Drizzle can be used for anything that needs a drizzle of strawberry flavor--crepes, waffles, ice cream, shortcake, muffins, pancake or cake.
