Strawberry Cheesecake In Hand

This no-bake dessert is served in tall glasses, and has layers of sweetened sliced strawberries, a fluffy cream cheese mixture, & graham crumbs.
 

Ingredients

  • 1 pint basket strawberries, stemmed and sliced
  • 2 tablespoons granulated sugar, for topping
  • 8 ounces light cream cheese, softened
  • 2 tablespoons granulated sugar
  • 3 tablespoons milk
  • 2 tablespoons lemon juice
  • 1 cup light whipped topping (Cool Whip)
  • 1 cup graham cracker crumbs
 
Method

In a bowl, toss strawberries with 2 Tbsp. sugar. Cover and set aside. In a mixer bowl, beat cream cheese and remaining sugar; add milk, then lemon juice, beating until smooth. Fold in whipped topping. Spoon 2 tablespoons of graham crumbs into each of four 8 to 10 ounce parfait or other tall glasses; top each with about 1/4 cup of the strawberries, 1/2 cup of the cream cheese mixture, then the remaining crumbs and strawberries, dividing equally.

 

Notes: Serve immediately or cover and refrigerate up to 4 hours.
