Classic creme puffs filled with a creamy blend of ricotta cheese, chocolate chips and fresh strawberries.

  • Servings: 12


Cream Puffs:
½ cup Water
¼ cup Butter
⅛ tsp Salt
½ cup Flour
2 Eggs
½ cup Powdered Sugar Plus 1/4 Cup, for garnish
½ tsp Almond Extract
1 tsp Vanilla Extract
½ tsp Cinnamon
1 cup Ricotta Cheese
½ cup Mini Chocolate Chips
1 cup Diced Strawberries


Combine water and butter in a saucepan, then bring to a boil. Add the salt and flour at the same time, then stir until mixture forms a ball. Remove from heat, add 1 egg at a time, beating well until mixture is smooth. Refrigerate for one hour. Preheat oven to 400 degrees. Form into teaspoon sized balls and place on a lightly greased cookie sheet. Bake for 15-18 minutes, until golden brown and sound hollow when tapped with a spoon. Cool, cut off tops, add filling, then replace tops. Dust with powdered sugar.

Filling: stir ricotta cheese, powdered sugar, extracts and cinnamon until smooth. Fold in chocolate chips and strawberries.
