Strawberry Cake

Use a white cake mix and strawberry gelatin to create this strawberry cake, baked in a tube pan. Both the cake batter and the cake frosting contain fresh strawberries.
 

Ingredients

  • 1 Box white cake mix
  • 1 3-ounce box strawberry Jello
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 cup chopped strawberries
  • FROSTING
  • 1/2 cup butter, softened
  • 1 16-ounce box confectioners sugar 1/2 cup chopped strawberries

Method

Combine cake mix, Jello, oil and eggs; beat for 3 minutes. Add strawberries and beat one minute. Pour into greased 10-inch tube pan. Bake at 350 degrees for 40 to 45 minutes until done. Cool 10 minutes. Remove from pan; cool on wire rack. For frosting, cream together softened butter and 1 cup of the confectioners sugar. Add berries and remaining sugar alternating. Spread on cooled cake.
