These homemade muffins are packed with a tasty flavor combination of banana and strawberry. What a great addition to any brunch.

1 cup sliced Fresh Strawberries
2 Tbsp Sugar To Toss With Strawberries
⅔ cup Mashed Ripe Banana
½ cup Sugar
½ cup 2% Milk
2 Large Egg Whites
2 Tbsp Vegetable Oil
2 tsp Vanilla Extract
2 cups All Purpose Flour
2 tsp Baking Powder
½ tsp Ground Cinnamon
¼ tsp Fine Salt


Preheat oven to 350 degrees and grease or line muffins tins with paper cups.

Toss strawberries with 2 tbsp sugar and set aside. In a large bowl, stir banana, remaining sugar, milk, egg whites, oil, and vanilla together. In a separate bowl, sift flour, baking powder, cinnamon, and salt. Stir dry ingredients into banana mixture, just until blended. Fold in strawberries and spoon into muffin cups. Bake for 20-25 minutes, until a tester inserted in the center comes out clean. Allow to cool for 15 minutes before turning out.
