Stone Fruit Puffs

Peaches, plums and pears fill puff pastry to make a succulent and juicy dessert.
 

Ingredients

  • 3 peaches
  • 3 plums
  • 3 pears
  • Juice of one lemon
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp nutmeg
  • 1 large sheet puff pastry
  • 1 egg
  • 1 tbsp sugar

Method

Preheat oven to 375 degrees. Peel and cut fruit into even sized quarters or eighths and toss in lemon juice. Melt butter in a small saucepan with brown sugar, add fruit and cook for a few minutes stirring occasionally. Add spices and vanilla. Cut puff pastry into four even squares, add filling and fold corners over filling. Gently beat egg and sugar, and then brush over pastry. Bake on a slightly sprayed baking sheet, for approximately 15 minutes or when dough is golden brown.
