Stained Glass Candy

Colorful candied fruits plus pecans are stirred into sweetened condensed milk & crushed vanilla wafers, then formed into logs, chilled & sliced.
 

Ingredients

  • 2 Tablespoons brandy, bourbon or apple juice
  • 1 can sweetened condensed milk (not evaporated)
  • 1 pound vanilla wafers, finely ground
  • 2 cups pecan halves
  • 3/4 cup whole candied red cherries
  • 3/4 cup candied pineapple, cut into small wedges
  • 3/4 cup candied green citron or green cherries
  • Powdered sugar

Method

In a large bowl, combine bourbon, brandy or apple juice, the sweetened condensed milk and ground vanilla wafers. Mix well. By hand, fold in the pecans, red cherries, pineapple, and green citron or cherries. Divide mixture into 4 equal parts and firmly shape each into a log. Roll each log in powdered sugar, making an even crust. Wrap each log tightly in plastic wrap and refrigerate a minimum of one or more nights before cutting. Cut logs into neat slices, revealing the stained glass effect, and serve in overlapping rows in a candy dish.

 

Notes: Be sure the fruit-and-nut-filled are compressed very tightly before rolling in powdered sugar.
