Spanish Flan Cheesecake

Caramelized sugar syrup makes this special cheesecake very similar to a traditional Spanish flan--and very delicious.
 

Ingredients

  • 1 can sweetened condensed milk
  • 1 can water, use condensed milk can
  • 8 oz light cream cheese
  • 3 large eggs
  • 1 teaspoon cornstarch
  • 1 teaspoon pure vanilla
  • Few drops fresh squeezed lemon
  • 3/4 cup sugar

Method

Mix 1st seven ingredients in blender on high speed until all are mixed to a smooth consistency. In round cake pan add 3/4 cup sugar. Stir with spoon on high heat until sugar browns or caramelizes. Stir sugar consistently since sugar browns quickly and can burn easily. Using a potholder, remove from heat and let stand for a minute so it may harden. Pour mixed ingredient from blender to cake pan. Pour about 2 cups water in an aluminum roasting pan, place in oven, then place cake pan in center of roasting pan. Bake in oven for 60 minutes at 350 degrees. Cool for 30 minutes then place in refrigerator for 30 minutes. With knife gently loosen rim of flan from cake pan. Place cake plate on top of cake pan, quickly turn over and pat to loosen. Let caramel sugar drip over flan.
