Southern Pecan Pie

Put the dough for this pie crust in the freezer while you mix the pecan filling so it will set. This recipe makes a great Thanksgiving dessert.
 

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 4 tbsp cold water, divided
  • Filling:
  • 1/2 cup granulated sugar
  • 1 cup light corn syrup
  • 1 tbsp melted butter
  • 2 tsp vanilla extract
  • 1 1/2 cups pecan halves

Method

Preheat oven to 350F. In a medium mixing bowl, combine flour, sugar, and salt. Drizzle oil onto flour mixture, toss with a fork to combine. Using a pastry cutter, or two knives, cut mixture until coarse crumbs form. Gradually add 3 tbsp water, stirring, until dough can be gathered into a ball (add remaining water if necessary). Press into a disc. Wrap in waxed paper, freeze for 20 minutes. While dough is in the freezer, prepare filling. In a medium bowl, whisk together sugar and eggs. Whisk in corn syrup, butter, and vanilla. Stir in pecans. Remove dough from freezer, roll between two sheets of waxed paper to a 12 inch circle. Remove top sheet. Turn dough over into a 9 inch pie plate. Remove remaining waxed paper. Trim the excess dough, leaving a 1/2 inch overhang. Fold edges under and crimp. Pour filling into crust. Bake until set and crust is golden, about 45 minutes. Transfer to a wire rack and cool completely.
