Fresh pear halves are baked in a pie plate with a sweetened vanilla syrup. An egg yolk custard is baked over them and topped with meringue.
Pre-heat oven to 350 degrees. In an oven-safe glass pie dish, place pear halves, flat side down. Combine and add 2 tablespoons of the sugar, the water and butter. Bake in a 350 degree oven until pears are tender.
Separate egg whites from yolks; set whites aside. Beat egg yolks and add 1 tablespoon of the sugar and the milk. Pour over pears and continue baking until custard is set, about 25 minutes. Meanwhile, beat egg whites with remaining sugar until stiff. Drop by spoonfuls on top of pear custard. Bake a few minutes until top is golden brown. Cool and chill. Serve cold.
Notes:
This is an elegant dessert and simple to make. I like to garnish each serving with three thin slices of unpeeled pears and a sprig of mint.
