Sky-High Strawberry Pie

A fluffy mixture of thawed strawberries and uncooked egg whites, with whipped cream folded in, is piled into a chocolate cookie crust and frozen.
 

Ingredients

  • 2 cups crushed chocolate sandwich cookies (such as Oreos)
  • 1/4 cup butter, melted
  • 1 cup granulated sugar
  • 2 egg whites
  • 1 tablespoon lemon juice
  • 1 10-oz pkg. frozen strawberries in syrup, partially thawed
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 cup heavy whipping cream
  • 1/2 cup chocolate syrup

Method

In a food processor, pulse cookies until fine. Add melted butter and press into a 10-inch pie plate. In a mixing bowl, combine sugar, egg whites, lemon juice, strawberries, vanilla and salt. Beat at high speed for 13-15 minutes, until fluffy and voluminous. Whip the cream and fold in. Pile into chocolate cookie crust. Cover with plastic wrap and freeze for several hours or overnight until firm. To serve, remove from freezer, place slice on plate and drizzle with chocolate syrup.

 

Notes: This is so easy and may be made quite awhile ahead of serving. It looks gorgeous and tastes divine. Needs to be eaten immediately after taken from freezer.
